I know you are shocked for your own eyeballs that you are actually reading a new blog post from me! Sorry for my absent-ness. I am still cooking my fool head off and creating everyday. Anyone who has blogged, knows it is a time consuming hobby. I do truly love sharing with you all, but sometimes it just comes down to time. And other times, I cannot lie, I am just too darn hungry to take pictures, write down ingredients ect. So it's a continuous cycle of trying to find the perfect balance. Very much true to everything in life....Correct?
Today, my two pooch side kicks and I are snugged up. Missing hubs big time! He is away in Chicago for the week working a trade show. Much work and planning on his part has went into having a booth at the show. Wouldn't you know, that last Tuesday rolled around and Larry woke up sick as a dog! WHAT!?! He next to NEVER gets sick (maybe once every 3yrs.). Well a nasty, nasty bug struck and it struck hard....laying him up in bed for 2 straight days. I have a feeling it would have been longer but with a full plate for the show, you can't keep a good man down. So I have been trying to help anyway I can to lighten his load and get him back to good. We (me & pooch's) wished him well this morning and sent him on his south way! GO Larry! In the meantime I am hosing this germ shack down & praying to God I don't get struck next. I am telling myself that this strong Paleo immune system can't be touched. It's all about the power of intention right?
Today I made myself a delicious breakfast and am planning a week of meals for a table of 1. Unless of course, you would like to come over and I'll cook for you? Ok, I am pretty sure I am boring you beyond words so without further ado....
HARVEST PALEO PANCAKE PERFECTION
Ingredients:
-1 mashed ripe banana
-3 free range eggs

I topped my pancakes with maple fried apples. Here's what I did:
-1 Cortland apple - skin on & chopped

-1/4 cup pecans
-dash of cinnamon & nutmeg, pinch of sea salt
Saute' apple mixture in the warm pancake skillet for 3-4 minutes and Wah-Lah....ready to top your pancakes! This recipe makes 6-7 pancakes.

ASIAN GRILLED SALMON
I apologize in advance for the poor picture. I realize everything kind of blends together. To be honest I was not going to blog this recipe but I took my first bite and well.....it was blog worthy! So take my word for it, this was so simple and super delicious! Enjoy!
ASIAN GRILLED SALMON
ASIAN GRILLED SALMON
For the marinade:
- 2 tablespoons dijon mustard
- 3 tablespoons coconut aminos
- 6 tablespoons good olive oil
- 1/2 teaspoon minced garlic
- 1/2 teaspoon minced ginger
- 1/2 juiced lemon
- S &P
Directions:
- Rinse salmon with cold water and pat dry
- Next combine all marinade ingredients by whisking together
- Drizzle half of marinade over salmon and allow it to sit in fridge for 15-20 min.
- Turn grill on medium-high and brush grilling rack with olive oil to prevent salmon from sticking
- Place salmon on hot grill and grill about 4 min. on each side depending on thickness
- Discard the marinade the salmon was sitting in
- Carefully remove salmon from grill, let rest 5 min., and drizzle with remaining marinade.
This recipe makes enough marinade for about 4 - 6oz. servings of salmon. We enjoyed our salmon with a sweet potato, parsnip hash. Delicious!

ANNIVERSARY GETAWAY FOR THE IN LOVE FOODIE'S
My husband (Larry) took an entire Friday off! Shocked... yes, I was:)
He close to never takes vacation. We packed up and got out of town to
celebrate our 2nd Anniversary! We headed to Madison, WI. Simply because
it is a city that hosts all of our loves.....great food, wine, shopping, and adventure.
The food was some of the very best we have ever experienced! Some of
our favorite restaurants are in Vegas and guess what our Madison weekend
hosted a slew of spots that were right up there! Larry and I have so much
in common and a loads of fun together that time goes too quickly and is
NEVER enough! Enjoy a little of our weekend!
( Lunch at Graze)
(Our view from the Honeymoon Suite at the Concorse Hotel. Most comfortable bed I have ever slept in!)
( Dinner at L'Etoile. 1st course grilled cantaloupe and prosciutto...fabulous. Larry had a beef tongue
1st course that was equally amazing...so much, it was gone by the time the camera was ready.)
(Seared Corvina Entree....delicious)
(Larry had the most amazing pheasant dish....not totally paleo but a delicious treat!)
(Because it was a special occasion, I treated myself to a sinful ending! Flourless chocolate cake with elderberry sorbet. The absolute best I have EVER had!~)
(Larry's sweet treat....blueberry cornbread with apricot and carmel sauce. Vanilla bean gelato. Nothing about this is even close to paleo. He has a stomach that allows himself to do a random treat and jump back on paleo the next meal. That is not the case for me...I pay dearly:(
(Caught in the rain at the greatest farmer's market....fine by us:)
I managed to stay completely paleo all weekend with the exception of the Chocolate Flourless Cake.
It was a treat! For me it was most important that I kept gluten free. I WILL NOT touch gluten at any point. Everywhere we ate used local, super clean ingredients, and no one ever once questioned accommodating my dietary guidelines. Love that! Felt great and had fun!

Pampered with POISON'S....No thank you!
Are You Ready For The FACTS’ ?
Women and beauty products – it’s a love affair that’s been going on for centuries.
And no wonder.
There’s nothing like a new lipstick or favourite perfume to make us look and feel good.
Or so we thought…
In fact, according to a new report, most of our favourite cosmetics are cocktails of industrially produced and potentially dangerous chemicals that could damage our health and, in some cases, rather than delivering on their potent ‘anti-ageing’ promise, are causing us to age faster.

Research that was carried out by Bionsen, a natural deodorant company, in this report it was stated that the average woman’s daily grooming and make-up routine means, and this is extreme to think, she ‘hosts’ a staggering 515 different synthetic chemicals on her body every single day.

Now when you consider that that millions of us, myself included, have just recently opened our eyes to realising that we have slowly been poisoning ourselves daily, Concerns about all these chemicals in cosmetics and creams is not new – to the manufacturer.
This has been rumbling along for years.
Our skin, the largest eliminatory organ in the body and our first line of immunity, is permeable to all chemicals. Although many still and will argue the point ! Medical research shows that significant amounts of cosmetic ingredients, including carcinogenic substances, penetrate the skin and end up in the blood stream. Many chemicals in cosmetics don’t cause obvious signs of toxicity on the skin but slowly poison us thorough repeated use.
What seriously concerns me, is that over the past twenty years, we have now become used to reading ingredients labels when shopping for food, so we are more aware than ever before- and some supermarkets and manufacturers have made huge strides in cutting out unacceptable ingredients (such as hydrogenated fats and artificial sweeteners, etc.) HOWEVER the wine industry and i do like a glass or two i have to say ! does not list the chemicals that they add to wine – on the grounds that there is not enough room on the labels!!!!! tsk , tsk, tsk…!This is scandalous. It seems to me that our first concerns should be for the products that WE INGEST! for many years, and that is one hell of a scary thought…

Many of those chemicals, are also used in products such as household cleaners, and have been linked to a number of health problems from allergies and skin sensitivity to more serious hormonal disturbances, fertility problems and even cancer.
Parabens, for example, which are designed to preserve the shelf-life of your cosmetics, are one of the most widely used preservatives in the world, and are found in shampoos, hair gels, shaving gels and body lotions. But their use is becoming increasingly controversial – a range of different studies has linked them to serious health problems including breast cancer, as well as fertility issues in men.
Research from the Kyoto Prefectural University of Medicine suggests that some parabens we had previously presumed to be safe, such as Methylparaben, may mutate and become toxic when exposed to sunlight, causing premature skin ageing and an increased risk of skin cancer.
Methylparabens are found in more than 16,000 products, including moisturisers and toothpastes. Cosmetic producers have always defended their use of parabens on the grounds that they can’t be absorbed into the body.
But many leading researchers disagree, including Dr Barbara Olioso, an independent professional chemist, who says:

‘Research shows that between 20 and 60 per cent of parabens may be absorbed into the body.’
And a recent study By Rebecca Sutton, Ph.D., Called, Adolescent exposures to cosmetic chemicals of concern, stated some rather alarming and interesting findings…!
Laboratory tests reveal adolescent girls across America are contaminated with chemicals commonly used in cosmetics and body care products. Environmental Working Group (EWG) detected 16 chemicals from 4 chemical families – phthalates, triclosan, parabens, and musks – in blood and urine samples from 20 teen girls aged 14-19. Studies link these chemicals to potential health effects including cancer and hormone disruption.
It was also said that teens used more products daily than the average adult woman ! Teen study participants used an average of nearly 17 personal care products each day, while the average adult woman uses just 12 products daily. Thus, teens may unknowingly expose themselves to higher levels of cosmetic ingredients linked to potential health effects at a time when their bodies are more susceptible to chemical damage. So come on mums out there we need to educate our children too !!
There are a number of laws designed to protect us from dangerous chemicals in cosmetics, but researchers worry that they don’t go far enough. For example, cosmetic manufacturers are required to list their ingredients, but they don’t have to tell us about any impurities found in the raw materials or used in the manufacturing process, so long as they don’t end up in the finished product.
The industry insists that our cosmetics are safe. The Cosmetic Toiletries and Perfumery Association recently said: ‘Stringent laws require all cosmetics to be safe, and each product undergoes a rigorous safety assessment. The number of ingredients in a product, or whether it is natural or man-made, has no bearing on how safe it is.’

Well i for one don’t want to take that as gospel.
They also say that any chemicals are present in safe doses that can’t harm us. While that may be true, there is some disagreement over what constitutes a ‘safe’ level – for young people and children, or sensitive adults, these levels may not be so safe at all.
And even if the relatively small amounts in individual products don’t hurt us, there is growing concern over the number of products women use daily, and if you are a product junkie like me then you will know what the cumulative effect could be, of so many chemicals being used all over our bodies every day, for many years.
Women have never been more image-conscious and our beauty regimes have changed over the years, from a simple “wash & go” attitude, to daily fake-tan applications, regular manicures, false lashes and hair extensions.
‘Lots of the high-tech, new generation cosmetics and beauty “wonder” treatments have been found to contain more chemicals to achieve even better results, which, of course, means women apply more chemicals than ever before.’
We have now become more conscious of our bodies, and wanting to stay younger for longer. For many years the Pure, Safe, beneficial way was an expensive alternative, and not easy to find products that really work for us.

If you want to protect yourself and your family, from chemical overload, switch to Natural/Botanical or Organic Products, and read the labels on your beauty and grooming products with care.
Come on over to the SAFE side…!

Roast Chicken, Rotisserie-Style with Cucumber Salad and Roasted Beets
Today I am paying dearly for a poor choice I made yesterday:( Yes, I too have moments of weakness. If you remember a post back, I admitted to my love affair with ice cream. I rarely ever treat myself too it because I find myself never being satisfied. I could turn that occasional treat into a daily dosing! Darn it! So all in all, it's best to just stay the heck away. Well, yesterday's events went something like this....
Larry (my husband): Can we run to Kelley's Creamery and get an ice cream treat?
Me: No, we don't need it. (See I started out strong.)
Larry: Come on we never treat ourselves to ice cream! We worked out all week so this can be our reward...
Me: Hmmmm?
Larry: You know you want some.
Me: No, I will just ride along. (secretly wanting it but still trying hard to not give in to the temptation.)
Larry: You can just get a single scoop...that's not so bad.
Me: Ok fine...let's do it! Disgusted with myself and happy all at the same time, I downed the single scoop of Leo's Butter Pecan.
The short 10 minutes it took me to eat it was certainly not worth the sugar hang over today. Yes, delicious but NOT worth it! You see, when you follow a strict Paleo regimen, one of the greatest gifts is being able to read your body to a fault. I am very in tune with what I need, what works and doesn't work. The sugar/dairy combo was disaster from the word go. Here is what happens when I "treat" myself. I am a anxious, crabby, sleepless, bloated mess! In fact, I pretty much can't stand being in my own skin post "treat." Maybe the average person wouldn't notice these symptoms or the correlation between food and behavior. BUT....trust me on this one, if you pull those not so good choices out of your diet, you will notice quickly what you need/don't need.
I would like to challenge you to be aware of the food and behavior correlation. There IS a reason why we live in a society filled with depressed, anxious, hyperactive, low energy, trouble concentrating, illness, suppressed immune systems individuals. Look deeply. In my eyes, there is a direct response to food and behavior. I see so many of these symptoms in young children and think...if there diets were tweaked.... things would look very different. Remove Sugar, Dairy, Grains, all Processed Foods and you are looking at a whole new shiny, happy individual!
Enough with my rant and onward to today's dinner.
